Banana Oatmeal Cookies



3/4 c. shortening                                     1 1/2 c. sifted flour
1 egg, well beaten                                   1 c. sugar
1 c. mashed banana                                1/2 t. baking soda
1 3/4 c. rolled quick oats                          1 t. salt
1/2 c. chopped nuts                                 1/4 t. nutmeg
                                                             3/4 t. cinnamon

Cream shortening and sugar. Add eggs, oats, and nuts. Sift dry ingredients together and add to mixture alternately with mashed banana. Beat until well blended together. Drop from teaspoon about 1 1/2 inches apart on greased cookie sheet. Bake in a 400 Degree oven for 15 minutes. Remove immediately from cookie sheet and cool.

Yield: 3 dozen                                        This recipe was submitted to Apple a Day Cook book by Mrs. Jack Kennedy

This sounds yummy and my 5 yr old would have a blast helping me with baking cookies. I will try these this weekend. Thank you so much for the recipe.
